Sauteed Bell Pepper, Mushroom, Onion, and Eggplant Medley
A la Charleston Garlic Vinaigrette & Marinad

Bell Peppers, Red and Green, washed and sliced
Medium Onion, Sliced
6 large mushrooms
1 large Eggplant, sliced and gently steamed but retaining slight crunchy texture.
¼ cup of Neita’s Garlic V & M

Heat skillet to medium/low heat. Add half of Neit’a V & M to pan and heat. Add vegetables slowly, stirring constantly and adding remaining V & M to taste until thoroughly heated and serve.
